Ingredients
 
  •   1 kg. Tender Green Broad Beans
  • 1/2 cup Olive Oil
  •  4-5 Cloves Garlic
  • 1 bunch of Green Coriander
  • Salt to taste

 

i Foul b' Zeit
A typical Middle Eastern dish made with green broadbeans and sautéed in olive oil, fresh garlic, coriander with a touch of lemon.

Method 1

  1. Wash beans and cut into 2-3 cm pieces utilizing inside pods and tender green skin only. Cover bottom of coking pot with olive oil.
  2. Slice garlic cloves and slightly fry till wilted.
  3. Add the beans and fry a little with garlic. Add water to cover and salt to taste.
  4. Bring to boil and let simmer for 15 minutes then add chopped coriander and let simmer for a further 15 minutes until done. Serve cold with bread.

Method 2

  1. Follow steps 1 and 2 above.
  2. Turn beans in hot oil with 1 tbs. spoon sugar until a bit soft.
  3. Add water to cover then cover pot and bring to boil then turn heat to low. 
  4. Keep cover on all the time while cooking until done, but jerking pot every now and then until you feel that the contents of the closed pot are becoming thick, signaling the completion of  cooking.  Lid may now be opened.
  5. In the meanwhile mash 4-5 cloves of garlic together with very finely chopped coriander. Add mix to contents of pot and turn briskly without mashing the beans. Serve cold with bread.
